What You Need To Make Mini Grinder Sliders

For the Sliders:

  • Brioche slider buns – Soft, slightly sweet, and perfect for soaking up all the flavors.
  • Provolone cheese – Melty, mild, and creamy. You can swap for mozzarella or swiss.
  • Salami & Pepperoni – These add that signature Italian sub flavor.
  • Turkey & Ham – A great mix of savory meats. You can use one or the other so that your guests have options.

For the Buttery Topping:

  • Butter, parsley & granulated garlic – This combo creates that golden, flavorful crust on top.

For the Grinder Salad:

  • Iceberg lettuce – Adds the perfect crunch.
  • Red onion – For a little sharpness. Feel free to soak in water first to mellow it out.
  • Pepperoncini peppers & juice – A tangy, slightly spicy kick! Can substitute with banana peppers.
  • Mayo, Dijon mustard & red wine vinegar – The creamy, zesty dressing that ties it all together.
  • Salt & black pepper – Season to taste!

How to Make Mini Grinder Sliders

Step 1: Assemble the Sliders

  1. Preheat your oven to 350°F (175°C).
  2. Place the bottom half of the slider buns on a baking sheet or in a baking dish.
  3. Layer provolone cheese evenly over the buns. It is important to layer the cheese on first to help prevent buns from getting soggy so quick.
  4. Add salami, pepperoni, turkey, and ham on top of the cheese.

5. Place the top halves of the slider buns back on.

Step 2: Add the Buttery Topping & Bake

  1. In a small bowl, mix together melted butter, chopped parsley, and granulated garlic.
  2. Brush this mixture generously over the tops of the sliders.
  3. Cover the dish with foil and bake for 15-20 minutes or until the cheese is melted and the tops are golden brown.

Step 3: Make the Grinder Salad

  1. In a mixing bowl, combine mayo, Dijon mustard, red wine vinegar, salt, and black pepper to create the dressing.
  2. Add in shredded lettuce, sliced red onion, and sliced pepperoncini peppers.
  3. Drizzle in 1 tbsp of pepperoncini juice and toss everything together until well coated.

Step 4: Assemble & Serve

  1. Once the sliders are done baking, carefully remove the top buns.
  2. Spoon a generous amount of the grinder salad onto the sandwiches.
  3. Place the tops back on, slice, and serve immediately!
