Creamy Beef and Gnocchi Soup
Creamy beef and gnocchi is a hearty one-pot meal made with ground beef, potato gnocchi, spinach, and Parmesan in a rich smoked paprika cream sauce.

- 1 pound ground beef
- 1 pound potato gnocchi
- 3 ounces fresh spinach
- ¾ cup heavy cream
- 3⅓ cups beef broth
- 2 tablespoons olive oil
- 1 medium onion diced
- 3 garlic cloves minced
- 1 tablespoon tomato paste
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- ½ cup grated Parmesan cheese
- Salt and black pepper to taste
Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned and cooked through, breaking it apart as it cooks. Drain excess grease if needed.
Add the diced onion and cook for 3–4 minutes until softened. Stir in the garlic and cook for 30 seconds.
Stir in tomato paste, smoked paprika, thyme, salt, and black pepper. Cook for 1 minute.
Add beef broth and heavy cream, stirring to combine.
Stir in the gnocchi and bring to a gentle simmer. Cook according to the package directions until tender, stirring occasionally.
Stir in Parmesan cheese until melted.
Add spinach and cook until wilted, about 1–2 minutes.
Taste and adjust seasoning. Serve warm with extra Parmesan.
