Creamy One Pan Tortellini With Sausage

Ingredients
  

  • 1 lb ground Italian sausage
  • 1 tbsp olive oil
  • 20 oz five cheese tortellini pasta
  • 2 cups heavy cream
  • 2 handfuls spinach roughly chopped
  • 1.5 cup chicken broth
  • ½ onion diced
  • ½ red bell pepper diced
  • 1 cup parmesan cheese grated
  • 3 cloves garlic minced
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp red pepper flakes optional

Instructions
 

  • In a large pan over medium heat, add olive oil, and ground Italian sausage.
  • Using a wooden spoon, break up the sausage and cook until golden brown—about 5–6 minutes. Once cooked, remove from the pan and set aside.
  • In the same pan, add the onion, red bell pepper, garlic, red pepper flakes, and salt to taste. Sauté for 2–3 minutes until softened.
  • Add the cooked sausage back to the pan.
  • Pour in chicken broth and heavy cream, then add tortellini. Stir to combine. Bring to a boil, then lower the heat.
  • Add in spinach and season with oregano, salt, and pepper.
  • Cook for 6–7 minutes, until the tortellini is cooked through.
  • Turn off the heat, then stir in the grated Parmesan cheese.
  • Once the sauce has thickened slightly, serve hot and garnish with more freshly grated Parmesan.
