In a large pan over medium heat, add olive oil, and ground Italian sausage.
Using a wooden spoon, break up the sausage and cook until golden brown—about 5–6 minutes. Once cooked, remove from the pan and set aside.
In the same pan, add the onion, red bell pepper, garlic, red pepper flakes, and salt to taste. Sauté for 2–3 minutes until softened.
Add the cooked sausage back to the pan.
Pour in chicken broth and heavy cream, then add tortellini. Stir to combine. Bring to a boil, then lower the heat.
Add in spinach and season with oregano, salt, and pepper.
Cook for 6–7 minutes, until the tortellini is cooked through.
Turn off the heat, then stir in the grated Parmesan cheese.
Once the sauce has thickened slightly, serve hot and garnish with more freshly grated Parmesan.
