Ingredients

For the Turnip Green Bites

  • 2 cups cooked turnip greens drained and squeezed dry
  • 1½ cups shredded Colby Jack cheese
  • 3 slices bacon cooked crispy and crumbled
  • 1 large egg
  • 1 teaspoon Creole seasoning or to taste

For the Breading

  • 1 cup all-purpose flour plus more if needed
  • 1 teaspoon Creole seasoning or to taste
  • 1 large egg
  • ¼ cup milk
  • Canola oil for frying

For Cooking the Turnip Greens

  • Chicken broth as needed
  • 1 small onion diced
  • 2 garlic cloves minced

Instructions

  • Cook the turnip greens with chicken broth, onion, and garlic until tender. Drain thoroughly, squeeze out excess moisture, and allow them to cool.
  • In a mixing bowl, combine the cooked turnip greens, shredded Colby Jack cheese, cooked crispy bacon, one egg, and Creole seasoning. Mix until evenly combined.
  • Use an ice cream scoop to form evenly sized balls. Place them in the freezer while preparing the breading station.
  • In a shallow bowl, combine the flour and Creole seasoning. In a separate bowl, whisk together one egg and the milk.
  • Roll each bite in the seasoned flour, dip it into the egg wash, and coat it in the flour again.
  • Place the breaded bites on a baking sheet and let them rest for a few minutes so the coating sticks.
  • Heat oil to 350°F in a heavy-bottomed pot or deep fryer.
  • Fry the bites in batches until golden brown and crispy, turning as needed for even cooking.
  • Transfer to a wire rack or paper towel-lined plate to drain. Serve warm with honey remoulade or your favorite dipping sauce.
