How to Make French Onion Chicken

Step 1: Caramelize the Onions

Slice the onions into thin strips. Melt butter in a large skillet over medium-low heat and add the onions with a pinch of salt. Cook slowly, stirring occasionally, until the onions become deeply golden brown and soft. If they begin to dry out, add a splash of Worcestershire sauce or a little water and continue cooking.

Step 2: Season the Chicken

Pat the chicken thighs dry and season them with granulated garlic, smoked paprika, salt, and pepper on both sides. This simple seasoning gives the chicken great flavor while letting the caramelized onions shine.

Step 3: Cook the Chicken

Heat olive oil in a skillet over medium heat. Place the chicken thighs in the pan and cook until golden brown and cooked through. Once done, remove the chicken from the skillet and set aside.

Step 4: Make the Onion Gravy

Once the onions are fully caramelized, add in minced garlic and cook for one minute until fragrant. Sprinkle flour over the onions/garlic and stir to coat them evenly. Slowly pour in the beef broth while stirring to create a rich, savory gravy. Bring gravy to a boil, then lower heat and allow to simmer 3-4 minutes until thickened.

Step 5: Return Chicken to Skillet

Add the cooked chicken thighs back into the skillet and spoon plenty of the caramelized onion gravy over the top so the chicken is well coated.

Step 6: Add the Cheese

Top the chicken generously with gruyere and mozzarella cheese. Make sure the cheese covers both the chicken and the onions.

Step 7: Bake Until Bubbly

Transfer the skillet to a 425°F oven and bake until the cheese is melted, bubbly, and slightly golden.

Tips

• The key to great flavor is slow caramelization of the onions. Don’t rush this step.
• If onions begin sticking or drying out, add a splash of water or broth and continue cooking.
• Broil for the last minute to get it golden brown and charred on top.
• A cast iron skillet works great since it can go straight from stovetop to oven.
